I don't care who the fighter is or how skilled they are they're going to be polar bear dinner. First off polar bears have an extra layer of fat around their already substantial fur. I doubt very seriously if any average pocket knife can even get through the fat layer to a vital organ. Even if that man was skilled with a knife and had a full-fledged bowie knife. He would have to be extremely extremely lucky to hit an organ quick enough to kill the bear before the bear killed him. So no I would bet every dollar I have ever made in my life that that polar bear is going to win that fight 100 out of 100 times.

The human might have a chance of surviving if either of the following is true.
One is that the pocket knife is attacked to a rather large gun, the gun is loaded, the human knows how to use it, and the human has time to get a shot or two off and manages to hit a critical part of the bear.
The other is that the pocket knife is in a car, and the human is inside the car along with the pocket knife with the doors shut. Apparently polar bears rarely bother to smash up a car to get the food (the bears name for what we would call a human) out of the car.
Otherwise the human would be alive for a few seconds. If the bear is feeling kind, he might knock your head off before he starts to eat you.
If the human is particularly large, athletic, strong and muscular, the muscles would provide more protein for the bear’s dinner.

Not long at all. There’s not a martial art in the world that’s effective against any kind of bear let alone a Polar Bear. Polar Bears are the most aggressive, most territorial, meanest bear there are. They will kill and eat other Polar Bears for encroaching on their territory. A pocket knife?!? Really?!? Just one of a Polar Bear’s paws is equipped with claws the size of full hunting knives. They outweigh even the most muscular human by hundreds of pounds, they’re faster and stronger than any Olympic athlete. The human has zero chance of making it out alive, if they’re lucky, the bear will make it a quick death.

Let me tell you a story I heard about a New Yorker who decided to go camping up in Grizzly country. He thought he should get some protection first, so stopped in at a gun store. After looking around for a while, the guy asked the owner:
“Hi, could you tell me which handgun is best in case of Grizzly attack?”
The owner peered over his glasses and replied:
“Why, pick any one you like son, but whatever one you pick just make sure to file the front sight down real smooth.”
“Why?”
“Cos that way it won’t hurt too much when the bear takes it off you and shoves it up your ass!”
The point being that to reliably take out a Grizzly bear, you need a high powered rifle or shotgun. Now how does a Grizzly compare to a Polar Bear?

Assuming they start out by standing close enough for the human to reach the polar bear, about 2 seconds.
If the human has a pocket knife, that’s a crunchy bit to the bear.
There’s simply no realistic way for a human to survive an encounter with a polar bear, unless the human has a good hunting rifle and spots the bear from a bit away. Whether the human is the strongest or the weakest human on the planet is immaterial; the strongest human in the world is considerably weaker than the weakest polar bear in the world.

That fighter isn’t killing that bear. There’s no question there. The moment blow comes to blow, that fighter’s life is finished.
Really, the best the fighter can hope for is to escape this encounter. I’ve heard that the thing to do with polar bears is to drop a piece of clothing or something that you’re carrying. Polar bears are inquisitive animals and they’ll stop and examine it, giving you time to put some distance in between the bear and you. If it comes after you again, you drop another piece of clothing. Repeat until you’re either out of danger, or you freeze to death from lack of clothing.
Please note that the above is the kind of advice that’s difficult to test in real life, so individual results may vary.
Having a car nearby can also change the odds of survival in your favor, even if the car isn’t turned on. A bear can outrun a human, but not around a large car or truck! Bipedal humans are a lot better at turning than our four-legged friends, and going around a car is basically a way of changing a speed contest into a turning speed contest. Sooner or later, it’ll get frustrated and tired of the chase, allowing you to get into the car and drive away. Just don’t make any mistakes before that happens.
Don’t fight polar bears. You’ll lose.

I feel in blades nothing less than a great sword (freshly sharpened) would be required to put a stop to a polar bear, wielded by someone skilled in it’s use and large enough to produce a very heavy stroke.
You’d only get one swing and it would need to be strong enough to create a massive injury in the bear. The pocket knife may as well be a toothpick, a pro fighter doesn’t last any amount of time with or without a pocket knife lol. Well the time it takes for the bear to maul him to death, but he’s off his feet helpless under the bear as soon as the bear makes contact.
From what I’ve heard, in the old colesseum matches when bears got to 1,000+ lbs they beat fighting bulls more often than not, bears under 1,000 lbs would lose more often than not to fighting bulls. A 1,100 lb male polar bear is a literal monster, way worse than a lion or tiger.
I’m not a sword person but it seems like even a longsword doesn’t have the weight behind it to create a large enough wound. The polar bear needs to weaken and succumb within about one minute after the wound is delivered or the person will be dead from the mauling. This will require a massive crippling wound, which I feel would require a heavier stroke than we realize. Even on a human you probably don’t cut a person in half with a great sword without a mighty stroke.
Even in the hands of a large strong skilled great swordsmen I feel it wouldn’t work most times, to put a square heavy stroke like that on a charging bear would be hit and miss. But it’s a chance.
