Difficult is a matter of degree. It’s not so hard in cities with large Chinese-American populations. It’s much easier to find if you have Chinese-American friends. From 1976–1978 I worked for a Chinese-American scientist in Washington DC. There was another Chinese-American in our group. They knew where to go. (And when, for Dim Sum.) We enjoyed lots of excellent food.
A few years later I worked for a Chinese-American scientist at du Pont. When we were planning a trip to San Francisco, we asked his advice. He’d been there. He had contacts. He made some calls. We had great food at the Chinese restaurants we visited.
BTW, all those “Chinese-Americans” were born in Taiwan or Hong Kong and moved to the US. None ever complained of not being able to get authentic food where they lived.
Now I live in Rochester, NY. Much more difficult.

Define authentic. If you mean food like you would find in a typical household in China, then I can tell you from personal experience that most Americans would probably find it unappetizing. I spent a great deal of time in China during the late twentieth and early twenty first century generally eating the same food as my hosts. I do not mean to imply that it is bad, quite the contrary, but I have always been an adventurous eater. It is, however, totally different from typical American fair.

What you’re really asking is why Chinese food in the US is different from Chinese food in China, and the answer is quite simple. A number of really smart Chinese chefs in the US spent a lot of time thinking about how to cook dishes that would appeal to American tastes.

The Chinese are a minority stateside, about 1.5 percent of the population, or 5 million give or take.
The average “Chinese restaurant” like panda express don't depend on the Chinese community for catchment. They can't, because the numbers are just not sustainable, especially beyond the handful of states where the Chinese are concentrated. These businesses give customers what they want, which is cheap, flavorful quantity.
The niche Chinese restaurants that serve the Chinese communities are found where the Chinese congregate, like the local Chinatown or China street.
Be warned that there are many different Chinese cuisines. Most Chinese people will only be able to identify with a handful they consider “authentic”. Where seafood is plentiful, the southern cuisines from Guangdong and fujian tend to dominate. Inland, we find more northern cuisines from hubei and Beijing.

Because Chinese restaurants are more interested in making money than being authentic.
Also weird things happen. When we lived in Austin, Texas my wife would get food at the local Mexican supermarket, because it turned out that Mexicans would cook food that was closer to authentic Taiwanese food than the Taiwanese restaurants.
Mexico and Taiwan are at the same latitude which means that you have the same ingredients. The people that ate at the local Mexican supermarket werent foodies, but construction workers that needed a quick and filling meal before heading back to the construction site. This happen to be the same situation as a Taiwanese farmer working the fields.

The other thing that is weird about Austin is that the cooks and the kitchen staff of the cheap Chinese restaurants were mostly Mexican.
The Chinese restaurant owners tended to open Japanese restaurants because the profit level was higher, and so I got this weird situation once when I was in a sushi restaurant where everyone was wearing Japanese clothes and serving Japanese food, and I realized that people were talking to each other in Mandarin.
One other thing is that one can argue that authentic Chinese food does not exist, since Chinese cuisine is heavily regional, so some place that is authentic would label them as Shanghai or Szechuan. The local food in Beijing is completely different than from Guangdong because the climate is very different. So any restaurant that calls itself Chinese is probably a mismash of different cuisines that appeals to local tastes.

“Chinese” food is a unicorn. China has one-fifth of the population of the globe, and is the size of a small continent. There is a tremendous breadth and variety of different types of regional Chinese cooking. However, what you generally tend to get served in the US (and the UK) as “Chinese” generally reflects none of them, but the sort of Westernised fare that has come to be labelled as Chinese food.

The original Chinese restaurants were started by Hong Kong immigrants that used Hong Kong cooking techniques using U.S. ingredients. They were also typically small restaurants that cooked everything in a wok. All that being said, finding authentic restaurants can be rewarding, but it often takes trying a few dishes numerous times, to develop a taste.
Many Chinese consider Guangzhou (Cantonese) style food to be the best. It is also closer to Hong Kong food most of us grew up on. Dim Sum (little dishes, normally eaten for breakfast or lunch) is also Cantonese.

Any authentic regional cuisine of China can be found in the San Francisco/San Jose region. These restaurants are where the real Chinese go. In these restaurants you may not find any white people during their busiest times. The Chinese restauranteurs will cook you whatever you want in order to make a buck. My uncle operated a Chinse/Western restaurant in a small town in northern California city of Susanville. My uncle will only make Americanized Chinese food because that is what sells and he can make money doing it. My uncle also make Western dishes. It was the best restaurant in town at that time.

That depends on where you are. It’s not difficult at all to find authentic Chinese restaurants at tier 1 metropolitan areas. You need to look for shopping centers where the entire strip are Chinese shops, from grocery market to fashion to restaurants to traditional Chinese medicine pharmacies.
Your best bet is to ask your Chinese friends to take you there, say you’re treating them, because it’s their birthday or something.

First of all, what region of China do you want your cuisine from? Just like the US has regional food, so does China. hot pot is my favorite and hot pot restaurants are becoming popular in the US but they are also regional.
Secondly, what kind of authentic do you want? Ducks head doesn’t have much meat on it but it is tasty, Chinese beef however isn’t very good. Chinese food in the US adapted to western tastes because westerners didn’t like Chinese food.
Lastly, ingredients are different, Broccoli beef and orange chicken don’t exist in china but loose headed cauliflower is popular but difficult to find in the US.

Short answer: Because, at least in my area, the majority of Chinese restaurants are owned by people from Fujian province. They come over here and get set up with a fixed menu and a supplier out of a major city. Fujian is not known for its food in China, but the people from Fujian are very hardworking businesspeople. They are unfamiliar with the food from places like Sichuan province and Americans have particular tastes. You can find authentic restaurants, but you have to try really hard.
I once took my good buddy to a place in Orlando for some sichuan food. He said he loved spicy food, but thought hebwas having a stroke because his mouth went numb from the huajiao.
It's also the same with American food in China, I went to KFC expecting to get American fried chicken and instead got sweet and sour-style chicken.

It is really easy to find traditional Chinese food if where you live has a high population of people with Chinese ancestry or similar Asian taste palates. But if there are not enough to make traditional Chinese food profitable they are smart enough to serve what will sell. That is food that has a broader appeal to more Americans. I have been to many traditional Chinese restaurants in the US. When you go in to a traditional Chinese restaurant, the customers are pretty much all Chinese or other Asians and they are more commonly speaking in one of the Chinese languages rather than English. The food is both great and inexpensive, but not what would appeal to enough Americans to make it profitable without the strong Asian presence in the community patronizing the restaurant. As a general rule the less expensive the food the more traditional the cuisine. An expensive “Chinese Restaurant” will be serving Americanized versions of Chinese food.

I wonder about this, and here’s why:
I live in an especially Chinese part of the Bay Area, which is already heavily Asian. When I worked with a Chinese person who went back on vacation, I asked her what she did when she was back there, and she said “Eat!”
I expressed surprise since there are so very many Chinese restaurants around here, and they are usually full of Asians, too, not white people. We’re not talking Panda Express or P.F. Chang’s, either — they’re places with Chinese signs on the outside and Chinese menus.
So I would have thought that they must be more authentic. But no, apparently not.
So the argument “they’re trying to appeal to Americans” doesn’t really wash. In my neighborhood a restaurant could be very successful if no white person ever went inside it.

This is a slightly different question but when I was young Memphis had only one Chinese Restaurant (Joy Young’s) and it was upscale for Memphis—white table cloths and all meals cooked to order, some fancy such as Peking Duck and some lobster dishes. I splurged and took a young lady there once. I have no idea how authentic it was, but there were always Chinese Americans eating there.
Now it is gone, but there are a hundred or more corner places, all with exactly the same all-you-can-eat buffets. I don’t say these are bad—I enjoy them and I like picking low carb items because I am diabetic. Still, how did this happen? I think there is a wholesale food supplier who does all the prep and the cafes can just heat and put it out. It is all the same everywhere I go.
They might fix food to order for Chinese customers. You could ask. I had a Chinese Aunt, and when she visited us from San Francisco, she called some Chinese restaurants and discussed what she wanted over the phone (in Chinese) before taking us there. I don’t remember what we got, but it was good and we did not get anything that looked back at us. But I think the locals got fried rice, eggrolls, and egg drop soup.

So about 15 years ago I was in SF for a conference. Friend took me to China town for authentic Chinese. Well, it probably was, but there was practically nothing on the menu which I was even willing to try: I do recall a dish with chicken toes. I admit I am not the most adventurous eater, but really not among the least either, so this is probably the issue. The types of foods served (i.e., animal-based) are too unfamiliar to most Americans to be appealing. Ordinary Chinese-American cuisine has been adapted to American tastes.

I spent a couple of weeks in Austria a few years ago, and there were 3 Chinese restaurants in the small town I was in. (One claimed to be Mongolian). All of them had buffets. Each buffet had a “Chinese “ side and an Austrian side. Think Panda Express but not as good on one side, and deli meat, jello, pudding (with actual vanilla wafers), white bread and fruit salad on the other side. That is what the locals wanted. I had a nice conversation with one of the waitresses (few locals knew English and my German is rusty). They came from China originally but decided the health care was better in Austria than in the US. They sold food that kept them in business. Austrians - and most Americans - wouldn’t like authentic Chinese food. I’ve had Chinese food served in Chinese homes (but still adapted to US sensibilities) and it is different from restaurant food (better) but not too different.
Where I live there are plenty of Chinese restaurants with menus in English and Chinese, the latter is usually very different with ingredients that Americans might not find appealing.
