Since I am a Chinese, I answer this question regarding Chinese. No, they didn’t use hands to eat rice. They used spoons. And this could be corroborated by archaeological evidence. I mean, there were spoons excavated from tombs buried in neolithic cultures in China. Here are two examples.

Here is a jade spoon made by people from in Lingjiatan Culture, or 凌家灘文化 (3800 BC-3300 BC) in Chinese.

I don’t know for the Koreans and Japanese, but the Chinese actually used forks and spoons before switching to chopsticks. In fact, the oldest historical records of people using forks actually come from China of all places lM. Archaeological evidence of forks, spoons, and chopsticks in China date back to the Shang dynasty or earlier but chopsticks were originally a cooking utensil. Forks were gradually abandoned in favor of chopsticks but spoons were kept for soups.
